Its a Summer long weekend! And I hope the weather people are wrong about the weather (go away rain!). When planning for the weekend at the cottage, we can often be left standing in our kitchens and grocery stores scratching our heads for quick healthy recipes. Try reaching for the watermelon and make a cucumber watermelon salad. It is quick, easy and it’s refreshing for these hot summer days.
- 6cups mixed greens, washed
- 3 cups cubed watermelon
- 1 ½ cups diced cucumber
- ¼ -1/2 cup sliced onion
- 1/3 cup crumbled feta cheese
- 4 tbsp. extra – virgin olive oil
- 3 tbsp. balsamic vinegar
- Fresh cracked pepper, to taste
In a large salad bowl combine mixed greens, watermelon, cucumber, onion, and feta. Mixed together olive oil and balsamic vinegar. When ready to eat drizzle on desired amount of dressing and garnish with pepper. You can also add mint or kalamata olives if you so desire as it adds bold flavor.
